Whenever I just don't feel like cooking I pop a chicken in the oven, make a salad, and some sort of instant rice. The house smells great and my hubby thinks I am a rock star. My favorite part? The fact that it is beer butt chicken and someone has to drink half of it before before I can add the rest of the ingredients. Tee Heee Heeee. Hey, whatever floats my boat.
So, I have been busy doing a buncha nothing. Pondering life as I know it and thinking about change. Just really thinking hard about change. No not, trans-gender sex change kind of change but just change in general. So, I will keep you updated. I suppose tonight I will make a meatloaf and have Drew squeal with delight as it is his all time favorite. Cheers.
I need to know how to cook that chicken...I love easy. Also, Chelsea has requested your mash potato recipe and I want that salad recipe with the walnuts that you served at bunko.

I say you start Amanda's Meal of the Day Club...we can all buy memberships and you give us great receipes to make...I'm in. So give up the goods cause my boys soooooooo love the meatloaf too. Don't change too much cause your pretty cool Rock Star already.

I've had beer butt chix on the grill--how do you do it in the oven? Temp? How long, approx? I bought two chix the other night, to do this w/, but it would be more practical for me to do it in the oven, then the grill (I'm not the master griller like Dana is...)---the oven is more "my thing."
Meatloaf is a huge hit at our house too-just made it Sunday--our all time favorite--and VERY flavorful--the Macormick's seasoning packet....YUMMO!
